Homemade Beef Stock

  1. Sprinkle the beef shanks with salt; set up bated.

  2. In a large Dutch oven or large heavy pot over medium-high heat, heat the olive oil.  Add the salted beefiness shanks and dark-brown on both sides until aureate brown; remove from pot and gear up bated.

  5. Reduce heat to low.  Return the browned beefiness shanks and onions to the pot, sweating the meat and onion until they have released nearly 1 loving cup of their juices.  Add together two quarts of h2o and let simmer, partially covered, for two hours.Do non allow the water to boil.

**  Consommé is slightly thicker and richer than beef broth.  You could substitute with beef broth.
